Egg Free Date Muffin Recipe

I only had 1 egg left but I needed to make more than 12 muffins. So I used the egg to make Delicious Blueberry Muffins and then decided to make a second kind of muffin that didn't require eggs. This uses half whole wheat flour. Here's a great one for egg free date muffins. Next time I'll add nuts too. I'll also try it with half the sugar because dates are sweet as it is. I did use the full cup this time though and they were still delicious! Yum! Great for breakfast.



 

Delicious Blueberry Muffin Recipe

These were really yummy! The topping was a bit crispy and really added something special to these blueberry muffins.



Easy Lasagna Recipe

I pulled out some ground beef and I didn't really have any plans for it. I had a beautiful tub of fresh ricotta in the fridge so I put them together to make what I think is an easy lasagna.



Hamburger Patties Recipe

I was making lasagna for dinner tonight and decided the kids probably wouldn't be interested, so I saved a bit of the ground beef. I was going to make up a few meatballs but I didn't feel like rolling so many balls so I made a big hamburger patty instead. You could divide the mixture in half to get 2 burgers and serve them on buns, or multiply the recipe for more burgers. I didn't use any egg or breadcrumbs in this recipe. It holds together just fine.


We started eating it before I decided I wanted to keep a record of this recipe. I didn't know it would taste so good.

Iced Mocha Recipe

I was too lazy to walk to the coffee shop to get something so I came up with this iced mocha drink. I love coffee and I love chocolate. YUM!





Slow Cooker (crockpot) Mexican Pulled Pork Tortillas Recipe

I had 3 big pork chops that I didn't know what to do with so I thought I'd put them in the slow cooker and let her do the work today. You could probably use a pork roast if that's what you have. Oh, and my chops were still frozen but the recipe turned out perfectly!

Banana Bread/Cake with Chocolate Topping

I took my favourite banana bread recipe and made bars out of it. Just make 1/2 a batch of the cake, you won't need the frosting.



Mirza Ghasemi (Persian Eggplant Dip) Recipe

This is good stuff. When I buy eggplants I never really have an idea of what they will become. They just sit in the fridge until I figure out what I want to do with them. This is usually where they end up.

I just garnished with a few fried onions. Toss rings of onion in flour and fry in oil until crispy.


4 servings

Ingredients
1 large eggplant
1 medium onion, chopped
4 cloves garlic, crushed
Olive oil
1 teaspoon turmeric
1/2 teaspoon salt
1/4 teaspoon pepper
1 tomato, peeled and diced
1 tablespoon tomato paste
2 eggs, lightly beaten


Directions
Preheat the oven to 400F.


Wrap the eggplant in foil and place on a baking sheet. Bake for about 30 minutes or until eggplant is very tender. Carefully open the foil and cut a slit in the eggplant. Scoop out the flesh and set aside. Discard the skin.

In a large pan over medium high heat, fry the onions and garlic in olive oil. Once they start to turn brown, add the eggplant and continue to cook until everything melts together and most of the liquid from the eggplant has evaporated.


Stir in spices, tomato and tomato paste. Cook over medium heat for about 10 minutes until the tomatoes get soft. Push the mixture to one side of the pan. Add a splash more oil and add the eggs to the empty side of the pan. Cook the eggs half way (give them a few stirs) then mix everything together. Continue to cook until the eggs are cooked through. Serve with warm pita.

Tip: To peel the tomato, bring a small pot of water to a boil. Cut an x in the bottom of the tomato. Place in the boiling water just for a minute or two. The skin should peel off easily. I made a small amount but you can easily multiply the ingredients for a larger family. You could bake the eggplants uncovered or grill them until the skin splits, but be careful not to let them dry out or you won't get much flesh out of them in the end.

Easy Cheesy Pita Pizza Recipe

Here's something I make often. Sometimes I'll use a tortilla instead, it just depends what I have on hand. You can use any kind of cheese you like and if you're in the mood, add other toppings. I like the little bit of sourness you get from using tomato paste but you could use pizza sauce if you prefer.


Risotto Style Spaghetti Recipe

This is easy and delicious. It's spaghetti prepared in the same way you would make risotto. Rather than just boiling the pasta and adding sauce later, here you're cooking the flavour right into it.


Foil Wrapped Salmon on the Barbecue Recipe

This is one of our favourite ways to cook salmon during the warmer months. It's really juicy but somehow still has that special flavour that you can only get from the barbecue.

Ingredients
6 4oz pieces of salmon fillet
juice of 1 lemon
1 tablespoon dried dill
1/2 teaspoon crushed saffron threads
1 teaspoon salt
1 teaspoon pepper
1 lemon sliced
cooking spray

Directions
Preheat your grill to medium while you prepare the fish.

Cut 6 pieces of foil large enough to wrap the salmon pieces in. If using salmon with skin, place the fish skin side down on the foil. If using skinless salmon, spray the foil with cooking spray before placing the salmon on the foil (or use a small piece of parchment paper under the fish).

Drizzle some lemon juice on top of each piece of fish. Mix dill, saffron, salt and pepper. Sprinkle spice mix over fish. Place a few slices of lemon on top of the fish then seal the top and edges of the foil very well.

Place on the grill for about 20 minutes or until fish is flaky. You can open one packet to check. There's no need to flip the packets at any point during cooking. Just be sure to watch out for the hot steam when opening them.

Serve with rice or salad.

Tip: You can do this with a whole piece of salmon fillet for a different presentation. Just be sure to adjust the cooking time accordingly. It will really depend on the thickness of your fish.

Homemade Flour Tortillas 2 Recipe

I decided to try another flour tortilla recipe today. I found this dough a little easier to work with than the first recipe I posted for Homemade Flour Tortillas. I don't know if 1 hour of resting is necessary. You may be able to get away with 15 minutes but I had phone calls to make so 1 hour wasn't a problem for me and the dough rolled out really easily. These ones roll up really well without cracking and would be great for making wraps.




Presto Coconut Pound Cake Recipe - Small Batch Baking

I took this fabulous book from the library called Small-Batch Baking by Debby Maugans Nakos. The first recipe I adapted was the Presto Pound Cake. It's a great base to add any flavours you want. I chose coconut this time. When I took the cake out of the oven it was nice and puffed but didn't take long to deflate. I'm not sure if that was supposed to happen but it tasted great anyway.

Don't throw away the egg whites. Store them in small containers for later use. They also freeze well.

Banana Chocolate Chip Muffin Recipe

I topped these tasty muffins with a sprinkle of oats and coconut. I also used half white and half whole wheat flour. They're moist and delicious! And you can add nuts if you're in a nutty mood.




Saffron Infused Cinnamon Raisin Biscotti Recipe

A hint of saffron in this recipe for cinnamon raisin biscotti makes them special. I used white and whole wheat flour here. The whole wheat flours makes them a little less dense than biscotti made with all white flour.

Crispy Chickpea Cake Pitas with Mint Yogurt Sauce Recipe

These turned out great! Normally I'd use ground cumin but I ran out so I used cumin seeds. I suppose I could have ground the seeds but I wanted to see how they would turn out with the seeds. Next time I'll dip them in flour before frying. I think they'll be even crispier that way.




Goldfish Cracker Crusted Salmon with Dill PIckle Yogurt Recipe

I used the original flavour of Goldfish crackers in this recipe but you could use whatever you like. How about the BBQ flavour or even the multigrain? Just crush them up in a baggie. And I love using yogurt as a base for sauces.



Creamy Vegetable and Chickpea Soup Recipe

I had some leftover canned chickpeas and corn on the cob in the fridge. It was raining outside today so I thought it might be a good day for soup! Or should we call this a chowder? I cut the kernels off the cob with a sharp knife, but you could easily use frozen or canned corn in this recipe.


Cajun Shrimp Tacos with Jicama Mango Salad Recipe

This recipe for Cajun Shrimp Tacos with Jicama Mango Salad was so fresh and delicious! If you can, make your own homemade flour tortillas. There's just something special about them. Also, make sure you taste your mango before you add it to the salad. A yucky mango will ruin your whole taco. I know, I've done it. My mango looked good but tasted a little off. You'll have to make the whole thing again. I repeat, taste your mango. I know the ingredient list is long, but other than a bit of chopping, this is really easy to put together. You could always save time by using store-bought tortillas.

These weren't at all like the flat ones you get in the store. These were puffier and they just seemed fresh. I don't mean as in just made. Hard to explain but I really enjoyed them.

This recipe for slow cooker pulled pork is super easy and delicious! Find a barbecue sauce that you love and use it in this recipe. I love the rib sauce from Swiss Chalet so whenever we eat there I usually ask for a large rib sauce to go. Just keep it in the fridge. It's great on pork or chicken. Next time you eat out at a chicken and rib place, ask for some sauce to go.

Extra Creamy Macaroni and Cheese Recipe

One of our favourite things to eat is homemade macaroni and cheese! We LOVE LOVE LOVE mac and cheese. I could eat it every day. You can probably tell how much I love it from all the pictures I've taken of this yummy goodness. As I'm typing out this post I'm starting to drool. Unfortunately it's 12am and I don't have enough cheese left to make any.



If you're in a rush, you can just eat it straight from the pot. No baking required. But the crispy broiled top is really good so think about it.

Still tastes delicious even without the breadcrumbs.
