Italian Lemon Cake

This Italian lemon pound cake is a recipe that I'd had my eye on for a long time. I finally made it back in April! I skipped adding frosting but if you visit the original recipe it'll tell you how to make it. The glaze needed a lot more lemon juice than the recipe called for. I used 5 tablespoons of lemon juice and it was still very thick. The cake itself isn’t very lemony so you really do need either the glaze or the frosting to bring the lemon flavour to this recipe. I'm not complaining though, it was still really delicious! Tuna Noodle Casserole

Tuna Noodle Casserole is such an easy dish to prepare and is especially good when you forgot to pull something out of the freezer. Just grab a can of tuna from the cupboard and you're set.

Tuna Noodle Casserole
Makes 4 servings

  • 3 cups cooked pasta
  • 1 can tuna, drained
  • 1 cup frozen peas or mixed vegetables
  • 2 cups grated cheddar cheese
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup 2% milk
  • salt
  • pepper
  • 3 tablespoons bread crumbs
  1. Preheat oven to 400F.
  2. In a 9 x 9 glass casserole dish, mix frozen veggies, tuna and cooked noodles.
  3. In a nonstick pot, melt butter on medium high heat, stir in flour and cook for a minute or two until it starts to turn golden.
  4. Add milk and bring to a boil. Stir until thick.
  5. Add salt & pepper as needed then toss with the noodle mixture.
  6. Stir in 1 1/2 cups of the cheese then top the whole thing with the last 1/2 cup of cheese and bread crumbs. Bake until golden and bubbly.
