Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Tuna Noodle Casserole

Tuna Noodle Casserole is such an easy dish to prepare and is especially good when you forgot to pull something out of the freezer. Just grab a can of tuna from the cupboard and you're set.


Tuna Noodle Casserole
Makes 4 servings

Ingredients
  • 3 cups cooked pasta
  • 1 can tuna, drained
  • 1 cup frozen peas or mixed vegetables
  • 2 cups grated cheddar cheese
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup 2% milk
  • salt
  • pepper
  • 3 tablespoons bread crumbs
Directions
  1. Preheat oven to 400F.
  2. In a 9 x 9 glass casserole dish, mix frozen veggies, tuna and cooked noodles.
  3. In a nonstick pot, melt butter on medium high heat, stir in flour and cook for a minute or two until it starts to turn golden.
  4. Add milk and bring to a boil. Stir until thick.
  5. Add salt & pepper as needed then toss with the noodle mixture.
  6. Stir in 1 1/2 cups of the cheese then top the whole thing with the last 1/2 cup of cheese and bread crumbs. Bake until golden and bubbly.
