Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Goldfish Cracker Crusted Salmon with Dill PIckle Yogurt

I used the original flavour of Goldfish crackers in this recipe but you could use whatever you like. Just crush them up in a baggie to turn them into crumbs. 



Goldfish Cracker Crusted Salmon with Dill PIckle Yogurt
Makes 3 servings

Ingredients
  • 1/2 cup plain yogurt
  • 1 tablespoon dried dill
  • 2 tablespoons grated dill pickles
  • 1 teaspoon capers, chopped
  • salt and pepper
  • 3 6oz pieces of salmon, skin removed
  • 3 teaspoons soft butter
  • 1 tablespoon dried dill
  • 1 tablespoon granulated garlic
  • 1 tablespoon onion powder
  • salt and pepper
  • 1/2 cup crushed Goldfish crackers
Directions
  1. In a bowl, combine yogurt, dried dill, grated pickle and capers. Season with salt and pepper. Refrigerate until ready to use.
  2. Preheat oven to 400F.
  3. Rub a little butter in a glass baking dish. Place fish in the dish and rub the top of the fish with butter. Divide the dill, granulated garlic and onion powder between the pieces of fish. Sprinkle on salt and pepper.
  4. Place 1/3 of the crushed crackers on each piece and distribute evenly over the top.
  5. Bake for 15 minutes or until fish is flaky with pulled with a fork.
  6. Serve with yogurt sauce.
