Italian Lemon Cake

This Italian lemon pound cake is a recipe that I'd had my eye on for a long time. I finally made it back in April! I skipped adding frosting but if you visit the original recipe it'll tell you how to make it. The glaze needed a lot more lemon juice than the recipe called for. I used 5 tablespoons of lemon juice and it was still very thick. The cake itself isn’t very lemony so you really do need either the glaze or the frosting to bring the lemon flavour to this recipe. I'm not complaining though, it was still really delicious! Egg Salad Sandwiches

I love egg salad sandwiches! I especially like them on toast with butter. Somehow the butter makes it even better! Here's how I make my egg salad.


Egg Salad Sandwiches
Makes 2 sandwiches

Ingredients
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped green onion (the green and white part)
  • 1 teaspoon fresh dill, chopped
  • 1/2 teaspoon black pepper
  • salt to taste
  • 1/2 teaspoon curry powder
  • 3 hard boiled eggs, diced
Directions
  1. Mix all ingredients, except for the eggs, in a bowl to make the dressing. Gently mix in the egg. Serve on toast with butter.
  2. You can add sliced tomatoes and lettuce if you like.
Tips:
  • I use one of those egg slicer gadgets. Slice the egg horizontally then carefully turn it and slice it diagonally. It'll be perfectly diced.
  • The egg slicer can be purchased anywhere that sells kitchen gadgets. Here's one from Ikea. Mine is different but I'm pretty sure that's where I bought it.
