Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. More Juicy Chicken Meatballs

This recipe is great because it uses leftover mashed potatoes.

I love using meatballs as a way of getting more veggies into my kids - they don't even know they're in there. If you don't have mashed potatoes you can boil a small potato and just mash it with a fork. Let it cool before adding it to the mix. I also put all the vegetables into the Magic Bullet because it was faster than chopping.




More Juicy Chicken Meatballs
Makes 12 meatballs

Ingredients
  • 1/2 lb ground chicken
  • 1 tablespoon barbecue sauce or ketchup
  • 1/8 cup finely minced onion
  • 1/8 cup finely minced red pepper
  • 1/8 cup finely minced button mushrooms
  • 1/8 cup finely chopped parsley
  • 1/2 cup cold mashed potatoes (with butter, milk, etc. is okay.)
  • salt and pepper
  • 1/2 cup plain breadcrumbs
Directions
  1. Preheat the oven to 400F. Line a baking dish with foil and spray with some cooking spray.
  2. In a bowl, combine all the ingredients with your hand until well mixed.
  3. Divide the mix into 12 portions and roll into balls. Mine were larger than golf balls. You can make them any size you want just be sure to adjust the cooking time.
  4. Place in the baking dish and bake for about 30 minutes or until no longer pink inside.
