Juicy Chicken Meatballs

You can make these low carb by using a sugar free ketchup or barbecue sauce. This recipe doesn't contain bread and has some veggies in it so it's perfect. They were super juicy and yummy! They were still juicy the next day when I microwaved them for lunch. The spice mix is salty enough so I wouldn't recommend adding any extra salt.

30 meatballs

1lb lean ground chicken
1 egg
1 tablespoon barbecue sauce
1 teaspoon granulated garlic
1 teaspoon paprika
1/2 teaspoon pepper
2 teaspoons Montreal Chicken Seasoning
1/3 cup grated zucchini
1/3 cup minced onion
1/3 cup minced button mushrooms

Mix all ingredients in a bowl. Start rolling meatballs. I got 30 and mine were just smaller than golf balls.

Heat some olive oil in a pan over medium high heat. Place meatballs in the pan and press down slightly. They won't go rolling around this way. Cook for about 4 minutes or until golden, then flip and continue to cook another 4 minutes or until cooked through.
