Italian Lemon Cake

This Italian lemon pound cake is a recipe that I'd had my eye on for a long time. I finally made it back in April! I skipped adding frosting but if you visit the original recipe it'll tell you how to make it. The glaze needed a lot more lemon juice than the recipe called for. I used 5 tablespoons of lemon juice and it was still very thick. The cake itself isn’t very lemony so you really do need either the glaze or the frosting to bring the lemon flavour to this recipe. I'm not complaining though, it was still really delicious! Juicy Chicken Meatballs

This recipe doesn't contain bread and has some veggies in it. The meatballs were super juicy and remained juicy the next day when I microwaved them for lunch. The Montreal chicken seasoning is salty enough so I wouldn't recommend adding any extra salt.

Juicy Chicken Meatballs
Makes 30 meatballs

  • 1lb lean ground chicken
  • 1 egg
  • 1 tablespoon barbecue sauce
  • 1 teaspoon granulated garlic
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 2 teaspoons Montreal Chicken Seasoning
  • 1/3 cup grated zucchini
  • 1/3 cup minced onion
  • 1/3 cup minced button mushrooms
  1. Mix all ingredients in a bowl. Start rolling meatballs. I got 30 and mine were just smaller than golf balls.
  2. Heat some olive oil in a pan over medium high heat. Place meatballs in the pan and press down slightly. They won't go rolling around this way. Cook for about 4 minutes or until golden, then flip and continue to cook another 4 minutes or until cooked through.
