Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Olivia’s Quarantine Brownies

During quarantine, my 13 year old kept in touch with her friends by having baking conference calls.  It was 3 of them with us moms “helping” out. I’m so glad I was allowed to join because I really don’t want to know what brownies with 11 cups of flour and egg shells taste like.

Here's a delicious brownie recipe given to us by one of the girls. This recipe is dangerous. Once you have one slice, you won't be able to stop until they're all gone.

Olivia’s Quarantine Brownies
Makes 12 servings

Ingredients
  • 2 cups of chocolate chips 
  • 1 cup of butter 
  • 1 1/4 cup of flour
  • 1 cup of sugar
  • 2 teaspoon baking powder 
  • 4 large eggs
  • 1/3 cup chocolate chips 
Directions
  1. Melt the chocolate chips and butter in a double boiler.
  2. Combine the dry ingredients and stir them into the chocolate mixture. 
  3. Stir in the eggs. 
  4. Pour batter into an 9x13 parchment lined baking dish and bake in a preheated 350F oven for approximately 30-40 minutes. We used an 8x8 dish last time when we made 1/2 the recipe. 
  5. You can sprinkle the 1/3 cup chocolate chips on top before baking, or wait until the brownies come out of the oven, that way they’ll melt and you can spread the chocolate over the top.
