Italian Lemon Cake

This Italian lemon pound cake is a recipe that I'd had my eye on for a long time. I finally made it back in April! I skipped adding frosting but if you visit the original recipe it'll tell you how to make it. The glaze needed a lot more lemon juice than the recipe called for. I used 5 tablespoons of lemon juice and it was still very thick. The cake itself isn’t very lemony so you really do need either the glaze or the frosting to bring the lemon flavour to this recipe. I'm not complaining though, it was still really delicious! Peanut Butter Kiss Cookies

I just LOVE peanut butter and chocolate together. Here’s something that I haven’t baked for Christmas in a long time. This year I decided it was time to make some.

The recipe is very easy, but for some reason mine fell flat. I did double the recipe so that could have something to do with it. It doesn’t matter because they are still soft and delicious!

Peanut Butter Kiss Cookies
Adapted from
Makes 18 cookies

  • 1 cup white sugar
  • 1 cup peanut butter (not the natural kind)
  • 1 egg
  • 18 Hershey’s kisses, unwrapped
  1. Preheat oven to 350F and line a baking sheet with parchment.
  2. Combine sugar, peanut butter, and egg until a dough forms.
  3. Shape into 1 inch balls and place on prepared cookie sheet. Press down to flatten slightly.
  4. Bake for 8-10 minutes.
  5. Remove cookies from oven and press a kiss into the centre of each cookie while they’re still warm.
  6. Cool completely before stacking. I put mine in the freezer for a few minutes to hurry things along. The kisses take awhile to harden on their own.
