Banana Oat Cookies

Yep - they look like poop 💩.

We just threw stuff in the blender and hoped for the best.

I assume they will work just as well with a chia or flax egg but I haven't tried.


Banana Oat Cookies

Ingredients
  • 3 very ripe medium size bananas
  • 2 large eggs
  • 1 teaspoon vanilla
  • 5 pitted dates
  • 1 1/4 cups quick oats
  • 1/2 cup steel cut oats (we ran out of quick)
  • 3 tablespoons unsweetened cocoa
  • 1/2 teaspoon baking soda
  • 1/4 cup mini chocolate chips
Directions
  1. Preheat the oven to 375F and line a baking sheet with parchment.
  2. Blend the bananas, eggs, vanilla and dates until smooth. Add all the oats, cocoa and baking soda - blend again. You will still see small pieces of oats. It’s fine.
  3. Transfer to a bowl and stir in the chocolate chips by hand.
  4. Drop by the spoonful onto the parchment lined baking sheet.
  5. Bake for about 14 minutes depending on the size of your cookies.
  6. They will puff up but they don’t spread much. They’re ready when they feel firm.
  7. Next time we’ll try adding some peanut butter!
