Banana Bran Muffins

Banana Bran Muffins
Makes 12 Servings

Ingredients
  • 1/2 cup buttermilk
  • 1/2 cup wheat bran
  • 1/4 cup apple sauce
  • 1/4 cup avocado (or unflavoured) oil
  • 1/2 cup brown sugar
  • 4 medium bananas, mashed
  • 1 tablespoon vanilla
  • 2 large eggs
  • 1 1/2 cup all purpose flour
  • 1/2 teaspoon cinnamon
  • 2 tablespoons flax seed (whole or ground)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup raisins
  • 1 medium apple, diced
Directions
  1. Preheat the oven to 350F and line 12 muffin cups with paper liners.
  2. Mix buttermilk with the bran and let it sit while you prepare the rest of the ingredients.
  3. Beat apple sauce, oil, sugar, bananas, vanilla and eggs with a fork until well combined.
  4. Add buttermilk mixture and mix until well combined.
  5. Add all other ingredients and stir just to combine.
  6. Divide between 12 muffin cups (or even 18). Sprinkle the tops with some oats if you want.
  7. Bake for about 18 minutes or until the toothpick comes out clean.
