Italian Lemon Cake

This Italian lemon pound cake is a recipe that I'd had my eye on for a long time. I finally made it back in April! I skipped adding frosting but if you visit the original recipe it'll tell you how to make it. The glaze needed a lot more lemon juice than the recipe called for. I used 5 tablespoons of lemon juice and it was still very thick. The cake itself isn’t very lemony so you really do need either the glaze or the frosting to bring the lemon flavour to this recipe. I'm not complaining though, it was still really delicious! Pineapple Salsa

Two days ago I made Oven Fried Paprika Chicken Strips. Yesterday, we had leftovers but I wanted to do something different. I took 2 pieces of the chicken and put them on a tortilla. It needed something else and wanted it to be fresh. I had some pineapple left in the fridge too, so I decided to make a quick little salsa to go on my tortilla. 

Pineapple Salsa
Makes 1 serving

  • 1/4 cup pineapple, diced
  • 1 tablespoon sweet red pepper, minced
  • 1 tablespoon sweet onion, minced
  • 1 tablespoon parsley or cilantro, chopped
  • 1/4 cup fresh tomato, diced
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon dried mint
  • pinch of salt pinch of pepper
  1. Combine all ingredients in a small bowl. That's it!
