The first day I made a stuffed pita.
I used the second half of the mix the day after on crackers. Great lunch!
2 servings (sandwiches)
1 can chunk light tuna in water, drained
2 tablespoons mayonnaise
2 tablespoons plain yogurt
1/4 cup diced sweet bell pepper (any colour)
2 tablespoons mince onion
1/3 cup diced celery
1/4 cup chopped olives (I used green)
1 tablespoon dried dill
2 tablespoons fresh lemon juice
2 tablespoons fresh chopped parsley
1/2 teaspoon dijon mustard
1/4 teaspoon pepper
salt to taste
Mix all ingredients in a bowl. That's pretty much it. Store in the fridge until ready to use.
