Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. The Best Banana Bread / Cake Recipe EVER

This is my favourite banana bread/cake recipe ever! You can also use this recipe to make cupcakes. 

I got this recipe from a free little booklet from Robin Hood flour from 1997. Although the image is different, I believe this is the same recipe from the book.

This one has walnuts.

To make a heart you put half the batter in a round pan and the other half in a square pan. When they're cooked and cooled. Cut the circle cake in half. Turn your square so you see a diamond. Add each half of the circle to the top edges of the diamond. Frost and drizzle with melted white chocolate, then put some toasted coconut around the edges.

On medium heat, cook 1 cup each frozen blueberries, frozen raspberries raspberries and 3 tablespoons sugar until the berries melt together into a sauce. Sprinkle on 1 teaspoon corn starch and stir until thickened. Remove from heat and chill until ready to use. Spread between layers of cake.

The Best Banana Bread / Cake Recipe EVER

Ingredients
For the Cake
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups sugar
  • 1/2 cup butter, softened
  • 1/4 buttermilk
  • 1 cup mashed ripe bananas (about 3 bananas)
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup buttermilk
For the Frosting
  • 2 8oz packs cream cheese
  • 1/4 cup butter, softened
  • 2 cups icing sugar
  • 1 tsp vanilla
Directions
  1. Preheat oven to 350F.
  2. Combine flour, baking powder, baking soda and salt. Add sugar, butter, 1/4 cup buttermilk and banana. Beat with a mixer on medium speed for 2 minutes.
  3. Add eggs, vanilla & 1/4 more buttermilk. Beat on medium speed for 1 minute.
  4. Spread batter evenly in 2 greased 9" cake pans, 2 loaf pans, or 24 prepared muffin tins.
  5. Bake for 30-40 minutes or until toothpick comes out clean.
  6. For frosting, beat cream cheese and butter together, then add icing sugar and vanilla. Beat until smooth. Spread over cooled cake.
  7. Cool completely before frosting or serving.
Tips:
  • Add nuts, chocolate chips, blueberries or anything else you think might be good with bananas.
