Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Pizza Dough

I prefer my pizza on thin crust so i would recommend rolling this dough out thinly. It was a little dense, but I imagine that's because the dough didn't have a chance to rise for very long.

The original recipe doesn't say anything about rising at all but now that I've tried it, I would say that we should give it time to rise. Let it rise for longer than 30 minutes if you've got time.


Pizza Dough

Makes enough for 1 large pizza or 1 extra large thin crust pizza

Ingredients
  • 3 cups all purpose flour
  • 2 1/4 teaspoon rapid rise yeast (or 1 packet)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 cup warm water
Directions
  1. Mix dry ingredients then make a well in the centre. Add oil and water then use your hands to mix it until it forms a ball. There shouldn't be any crumbs left in the bowl.
  2. Rub with a little oil and cover with plastic wrap. Let the dough rise for about 30 minutes (or longer) while you prepare your toppings.
  3. Add toppings and cheese as desired and bake in a preheated 375F oven for about 25 minutes or until your toppings are cooked.
