Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Huevos Rancheros - Mexican Rancher's Eggs { with black beans, salsa and cheddar on a tortilla }

Huevos Rancheros is a popular Mexican breakfast. It means Rancher's Eggs and it's yummy!

You could probably place a ring of the beans and salsa on the tortilla and crack an egg in the middle before baking, but you'd risk the chance of your tortilla burning before your egg is cooked (unless you like them on the raw side). I prefer to fry my egg a little first. 


Huevos Rancheros

Makes 1 serving

Ingredients
  • 1 8" whole wheat tortilla
  • 1 large egg
  • butter
  • salt & pepper
  • pinch of oregano
  • 3 tablespoons store bought salsa
  • 2 tablespoons canned black beans, rinsed & drained
  • 1/8 teaspoon ground chipotle powder or to taste
  • 1/2 oz shredded sharp cheddar
Directions
  1. Preheat oven to 425F
  2. Fry egg in a little butter and sprinkle with salt, pepper and oregano. I like my yolk runny but not the whites. Cook it slightly less than you want it in the end.
  3. Place the tortilla on a baking sheet lined with parchment. Place the egg on top.
  4. Mix salsa, beans and chipotle powder in a bowl then place around the egg. Sprinkle cheese on top and bake until cheese is melted. Remove from oven and top with chopped avocado.
