Italian Lemon Cake

This Italian lemon pound cake is a recipe that I'd had my eye on for a long time. I finally made it back in April! I skipped adding frosting but if you visit the original recipe it'll tell you how to make it. The glaze needed a lot more lemon juice than the recipe called for. I used 5 tablespoons of lemon juice and it was still very thick. The cake itself isn’t very lemony so you really do need either the glaze or the frosting to bring the lemon flavour to this recipe. I'm not complaining though, it was still really delicious! This is a good low-carb breakfast but you can serve it with toast if you like.

Scrambled Egg Breakfast Bowl
Makes 1 serving

  • 3 slices turkey bacon, diced
  • 1/2 red pepper, diced
  • 2 tbsp chopped onion
  • 1 teaspoon butter
  • 2 eggs, beaten
  • cheddar cheese
  1. Saute bacon, onion and pepper in a bit of butter until brown.
  2. Mix cheese with egg and stir into veggie mixture. Stir to scramble until eggs are cooked and cheese is melted. 


  1. Simple, Quick and Delicious! Can't acquire turkey bacon around these parts, so standard pig bacon will have to do. •
