Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Makes 12 servings

Ingredients
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup white sugar
  • 1 tablespoon instant coffee
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi sweet or white chocolate chips
Directions
  1. Preheat oven to 350F. Spray and line an 8" glass baking dish with parchment.
  2. In a large bowl, combine cocoa powder, flour, sugar, baking powder and salt with a whisk. Make a well in centre. Stir coffee into 1 tablespoon hot water and add to the bowl. Add the butter, then the eggs and vanilla. Mix just until everything is combined.
  3. Stir in the chocolate chips.
  4. Pour the batter into the prepared pan and bake for about 25 minutes or until a tester comes out clean.
  5. Allow to cool before serving.

  • 1/8 teaspoon salt

  • 1 tablespoon vanilla extract
  • 1/3 cup semisweet chocolate chips
  • 1/3 cup butterscotch chips
Directions
  1. Preheat oven to 350F. Spray and line an 8" glass baking dish with parchment.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda and salt. Make a well in the centre of the bowl and add the melted butter.
  3. Add the egg and vanilla and stir just until combined. Stir in both chocolate chips.
  4. Pour the batter into the prepared pan and bake for about 25 minutes or until a tester comes out clean. Cool before serving.
