Italian Lemon Cake

This Italian lemon pound cake is a recipe that I'd had my eye on for a long time. I finally made it back in April! I skipped adding frosting but if you visit the original recipe it'll tell you how to make it. The glaze needed a lot more lemon juice than the recipe called for. I used 5 tablespoons of lemon juice and it was still very thick. The cake itself isn’t very lemony so you really do need either the glaze or the frosting to bring the lemon flavour to this recipe. I'm not complaining though, it was still really delicious! Makes 12 servings

Ingredients
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup white sugar
  • 1 tablespoon instant coffee
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi sweet or white chocolate chips
Directions
  1. Preheat oven to 350F. Spray and line an 8" glass baking dish with parchment.
  2. In a large bowl, combine cocoa powder, flour, sugar, baking powder and salt with a whisk. Make a well in centre. Stir coffee into 1 tablespoon hot water and add to the bowl. Add the butter, then the eggs and vanilla. Mix just until everything is combined.
  3. Stir in the chocolate chips.
  4. Pour the batter into the prepared pan and bake for about 25 minutes or until a tester comes out clean.
  5. Allow to cool before serving.

  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/3 cup unsalted butter, melted
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1/3 cup semisweet chocolate chips
  • 1/3 cup butterscotch chips
Directions
  1. Preheat oven to 350F. Spray and line an 8" glass baking dish with parchment.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda and salt. Make a well in the centre of the bowl and add the melted butter.
  3. Add the egg and vanilla and stir just until combined. Stir in both chocolate chips.
  4. Pour the batter into the prepared pan and bake for about 25 minutes or until a tester comes out clean. Cool before serving.
