Peanut butter blossom cookies are probably one of my favourite cookies of all time. This recipe for peanut butter blossoms makes a soft cookie with just the right amount of chocolate from the Hershey’s Kisses. These easy to make cookies are perfect for Christmas or any other holiday. Makes 12 servings

Ingredients
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup white sugar
  • 1 tablespoon instant coffee
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi sweet or white chocolate chips
Directions
  1. Preheat oven to 350F. Spray and line an 8" glass baking dish with parchment.
  2. In a large bowl, combine cocoa powder, flour, sugar, baking powder and salt with a whisk. Make a well in centre. Stir coffee into 1 tablespoon hot water and add to the bowl. Add the butter, then the eggs and vanilla. Mix just until everything is combined.
  3. Stir in the chocolate chips.
  4. Pour the batter into the prepared pan and bake for about 25 minutes or until a tester comes out clean.
  5. Allow to cool before serving.

  • 1/3 cup semisweet chocolate chips
  • 1/3 cup butterscotch chips

  2. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda and salt. Make a well in the centre of the bowl and add the melted butter.
  3. Add the egg and vanilla and stir just until combined. Stir in both chocolate chips.
  4. Pour the batter into the prepared pan and bake for about 25 minutes or until a tester comes out clean. Cool before serving.
