Italian Lemon Cake

This Italian lemon pound cake is a recipe that I'd had my eye on for a long time. I finally made it back in April! I skipped adding frosting but if you visit the original recipe it'll tell you how to make it. The glaze needed a lot more lemon juice than the recipe called for. I used 5 tablespoons of lemon juice and it was still very thick. The cake itself isn’t very lemony so you really do need either the glaze or the frosting to bring the lemon flavour to this recipe. I'm not complaining though, it was still really delicious! Baked Apples

Here's a quick dessert idea. These baked apples can be served with vanilla ice cream. Yum Yum!

Baked Apples
Makes 4 servings

  • 2 medium apples
  • 1/4 cup large flake oats
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon unsalted butter, softened
  • 1/4 cup apple juice
  • cooking spray
  1. Preheat the oven to 400F.
  2. Cut the apples in half and remove the core. Cut just a little off the bottom of each apple half to stop it from rolling around.
  3. Combine the other ingredients and divide the mixture among the apples.
  4. Spray a glass baking dish with cooking spray and place the apples inside. Pour apple juice in the dish.
  5. Bake the apples for about 20 minutes or until they're tender.
