Italian Lemon Cake

This Italian lemon pound cake is a recipe that I'd had my eye on for a long time. I finally made it back in April! I skipped adding frosting but if you visit the original recipe it'll tell you how to make it. The glaze needed a lot more lemon juice than the recipe called for. I used 5 tablespoons of lemon juice and it was still very thick. The cake itself isn’t very lemony so you really do need either the glaze or the frosting to bring the lemon flavour to this recipe. I'm not complaining though, it was still really delicious! White Pizza Tortillas

White Pizza Tortillas
Makes 1 tortilla pizza

  • 1 whole wheat tortilla
  • 1/2 teaspoon olive oil
  • 1 teaspoon granulated garlic, divided
  • 1 teaspoon dried oregano, divided
  • 1/3 cup grated mozzarella cheese
  • pizza toppings of choice, sliced, diced or chopped
  • 1 teaspoon grated parmesan cheese
  1. Brush the tortilla with olive oil and sprinkle with 1/2 teaspoon granulated garlic and 1/2 teaspoon dried oregano.
  2. Sprinkle on the mozzarella and add your favourite toppings, followed by the remaining granulated garlic and oregano. Add a sprinkle of freshly grated parmesan cheese.
  3. Bake in a preheated 475F oven until the cheese is brown and bubbly or the tortilla starts to get crisp. Watch carefully or the tortilla may burn around the edges. This will only take a few minutes to cook - do NOT walk away.
