Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. They middle should be slightly jiggly but they still taste yummy if you over-bake them. Allow to co

5 Minute Chocolate Mug Cake

Here’s the recipe for the famous 5 minute chocolate mug cake that was going around through email years ago.  Everyone keeps saying how terrible it is. Well, everyone is right. 

The texture of this particular mug cake was not pleasant. It was chewy, and not in a good way. I was expecting a brownie texture but it was like a sponge instead. 

Here's the recipe as I received it in the email. But I wouldn’t recommend making this. I just wanted to show you that not every recipe is successful.

Since then, I think we’ve been able to come up with much better recipes for microwave cakes. You may want to try one of these instead. Individual Microwave Lemon Cakes or Coffee Microwave Cakes. And there are several of them going around Pinterest as well. I haven’t tried them all, but they’re worth a shot when you’re desperate for something sweet.


5 Minute Chocolate Mug Cake
Makes 1 Serving

Ingredients
  • 4 tablespoons flour 
  • 4 tablespoons sugar 
  • 2 tablespoons cocoa 
  • 1 large egg 
  • 3 tablespoons milk 
  • 3 tablespoons avocado (or unflavoured) oil 
  • 3 tablespoons chocolate chips (optional) 
  • A small splash of vanilla extract
Directions
  1. Add dry ingredients to your largest mug and mix well. Add the egg. Pour in the milk and oil and mix well again. Add the chocolate chips, vanilla extract and stir until combined.
  2. Put your mug in the microwave and cook for 3 minutes on high. Check it after a minute, then two to see how it’s doing.
  3. The cake will rise over the top of the mug, but don't be alarmed! Let it cool a bit before you eat it. If you really want to eat it. I certainly do not.
