Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Stuffed Baked Potatoes

You can bake or boil your potatoes. Boiling will make the first part of this dish go faster, but baking them adds even more flavour. You want the potatoes tender but don't cook them until they're falling apart. Let them cool enough so that you can handle them before scooping out the flesh.

If you're feeling really naughty, you could add some homemade bacon bits and extra sour cream to these.


Stuffed Baked Potatoes
Makes 5-10 servings (I can eat a whole potato, how about you?)

Ingredients
  • 5 medium boiled or baked potatoes, whole with skin on
  • 1/4 cup sour cream
  • 3 Tbsp butter
  • 2 Tbsp grated parmesan cheese
  • 1 chopped scallion
  • sprinkle of the following spices
  • paprika, garlic salt, pepper, dill
  • 3/4 cup shredded cheese of choice
Directions
  1. Preheat oven to 400F.
  2. Cut the potatoes in half then scoop out the flesh leaving enough flesh to hold the shape of the skin.
  3. Mash the flesh with the sour cream, butter, parmesan and scallion. Fill the skins with this mashed potato mixture. Place the potatoes in a glass baking dish.
  4. Mix the spices together then sprinkle the spice mix over the potatoes. Top with some shredded cheese.
  5. Bake for about 15 minutes or until golden and bubbly.
