Slow Cooker (crockpot) Mexican Pulled Pork Tortillas

This slow cooker Mexican pulled pork recipe is easy meal to throw together. I had 3 big pork chops that I needed to use up so I thought I'd put them in the slow cooker and let her do the work today. My pork chops were frozen so you can just grab them from the freezer and get things going. 



Slow Cooker (crockpot) Mexican Pulled Pork Tortillas
Makes 12 tortillas (depending on how much meat you put in)

Ingredients
  • 1 medium onion, sliced
  • 1/4 cup cold water
  • 3 1" thick boneless pork chops (about 2 1/2 lbs of pork)
  • 1 cup of your favourite barbecue sauce
  • 1 tablespoon Mexican seasoning blend
  • 1 tablespoon chili powder
  • 1 tablespoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cocoa powder
  • 1/2 teaspoon instant coffee granules
  • 1 sweet bell pepper, sliced (I used yellow today)
  • 1 recipe Homemade Flour Tortillas or Homemade Flour Tortillas 2
Directions
  1. Place the onions and water in the slow cooker and place the pork chops on top. Mix all other ingredients and pour over the pork. Cover and cook on high for 6 hours or low for 8-10 hours.
  2. Use two forks and shred the pork chops right in the slow cooker. Add the peppers and stir it up. Cook for another 30 minutes or until peppers are tender. Serve on tortillas.

Tips:
  • Barbecue sauce can be sweet, so if you want to cut the sweetness, serve this with some sour cream. But I like it just the way it is!
