Maple Pecan Blondies

Here’s a blondie recipe that I have made many times!  Mine are never as gooey as Gemma’s and that’s probably because I over-bake them. I should keep a better eye on them next time. I like to brown the butter first but it’s not necessary. Enjoy!  Maple Pecan Blondies Makes 9-12 servings Original recipe from Bigger Bolder Baking Ingredients ¾ cup butter, melted or browned 1¼ cups dark brown sugar ½ cup maple syrup 1 large egg  2 teaspoons vanilla 1/2 teaspoon salt 2 cups all-purpose flour ¼ teaspoon baking soda I ¼ cups pecans, toasted and chopped  Directions   Preheat the oven to 350°F. Grease and line a 9x13” baking pan with parchment. Gemma used 8x8 but I like my bars thinner. Whisk together the butter, brown sugar, maple syrup, egg, vanilla, and salt. Stir in the flour and baking soda just until combined.  Stir in the pecans. Pour mixture into prepared pan and bake for 30-35 minutes. Shrimp Linguine Alfredo

I love cream sauce and I love pasta! This recipe for Shrimp Linguine Alfredo is delicious!


Shrimp Linguine Alfredo

Makes 4 servings

Ingredients
  • 5 cups cooked pasta
  • 3 tablespoons each butter & olive oil
  • 4 cloves minced garlic
  • 40 shrimp peeled & deveined
  • 1 teaspoon flour
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 6 tablespoons Parmesan cheese
  • 1/4 cup fresh chopped parsley

Directions
  • Melt butter in oil in a large nonstick pan over medium high heat.
  • Add garlic and fry only for a few seconds just until it starts to change colour. Add shrimp and cook just until they're almost pink. Remove the shrimp to a bowl immediately. If you overcook your shrimp they will be chewy!
  • Add the flour & pepper to the pan. There should still be some butter/oil, if not, add another teaspoon. Cook for a minute then add the milk and whisk until it thickens.
  • Stir in the cheese.
  • Add the shrimp back and cook just for a minute to heat through.
  • Add the pasta and parsley and give it a toss. It's ready to serve. Squeeze a little lemon on it before you eat it. Yummy!
Tips:
  • You could make this with chunks of chicken breast.

  1. I tried this today. Very good. I added whipping cream to the mix and a little more cheese.
