Chicken and Vegetable Soup with Rice


8-10 servings

Ingredients
2 celery stalks diced
1 large carrot diced
1 onion diced
1 eggplant diced (about 1 cup)
2 large potatoes diced
1 cup chopped green beans
1/4 cup uncooked rice
4 cups chicken stock
4 cups water
2 bay leaves
1/2 tsp pepper

salt to taste
1 cup left over chicken breast chopped
1 heaping tbs tomato paste
1/2 cup chopped fresh dill
Juice of half a lemon


Directions
In a large pot, sautee all the veggies on medium high heat with some olive oil (just a bit).

When they start to get soft, add the rice. Stir to coat. Then add the liquids, bay leaves, salt and pepper. Simmer until the veg & rice are cooked (but not mushy). Add your cooked chicken, tomato paste, dill & lemon juice. Stir and simmer for a few minutes more. Serve hot! Yum yum!

Tip: Add any veggies you like or maybe some other kinds of beans. Switch it up by using barley instead of rice

Beef and Vegetable Stirfry



6-8 servings

Ingredients
1lb steak cut into thin slices
canola oil for frying
4 cups mixed veggies of choice
2tbs hoisin sauce
1tbs soy sauce
1tsp chopped garlic
1/2 tsp chopped fresh ginger
1/2 cup chicken broth
1tsp honey
1tbs lime juice
chili paste or sauce as you like it
1tsp corn starch


Directions
In a little oil, fry the beef on high heat just until it's almost done, still a little pink. Remove from the pan and set aside. Add the veggies and fry until almost cooked but still slightly crunchy. Mix all the sauce ingredients together then add to the pan. Stir until it thickens. Add the meat and cook just until it's no longer pink. Serve over noodles or rice.

Tip: You could easily substitute other proteins for the beef or mix and match.

Meatballs

I always have meatballs in the freezer for mac and meatball emergencies. Meatballs are always a winner in my house for meals where I can't get my pre-schooler to eat much else.


Approximately 24 meatballs

Ingredients
1lb lean ground beef
1/4 cup italian seasoned breadcrumbs
1 egg
1/4 cup chopped onion
1/4 cup shredded cheddar
oregano, garlic powder, salt & pepper


Directions
Mix it all up and shape into little meatballs. Bake at 400F about 20 minutes or until cooked through. Turn them to brown both sides.


Tip: The number of meatballs and cooking time depends on the size of your meatballs. I make this recipe then either freeze the meatballs raw or cook them and then freeze them.

Banana Pancakes with Banana Syrup


 Ingredients
1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract
2 ripe bananas, mashed
1/2 cup maple or regular syrup
1 sliced banana
1/2 tsp cinnamon

Directions
Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil, vanilla and bananas.

Stir flour mixture into banana mixture; batter will be slightly lumpy.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides.

Syrup: Combine syrup, banana and cinnamon in a pot and bring to a bubble. Cook until the bananas are soft. Serve hot.

Garlic and Bread Soup

I thought this was a Polish soup but I can't find any details online about where this soup came from. This is how my mom makes it and I think my grandfather used to eat this too. It's yummy and warms you up!

Ingredients
1 chopped garlic clove (or more if you like)
1/2 teaspoon butter or lard
1 slice of rye bread toasted and broken in pieces
splash of Maggi liquid seasoning
1 cup boiling water


Directions
Add everything to your bown and enjoy. If you can't find maggi, you could probably use soy sauce but it will taste a little different. Just don't go kissing anyone after you eat this.

Emelia's Mac and Meatballs with Cheesy Gravy


1 serving

Ingredients
1/2 cup cooked elbow macaroni
5
meatballs
1 cup chicken stock
1/2 cup milk
1 tbs flour
1/4 cup shredded cheddar


Directions
In a small pot, boil the meatballs in the chicken stock until cooked (or reheated). Remove from stock.

Bring stock to a boil. Mix cold milk and flour until the lumps are out. Add to boiling stock and stir until thickened. Remove from heat and stir in the cheese. Toss a few spoons of sauce with macaroni and meatballs. Store the rest of the sauce in the fridge for a day or two. Just heat it up with some more pasta and meatballs.
